Rosewood Estate specializes in mead (fermented honey water) and mead-based wines produced from honey collected from their hundreds of beehives scattered across the Niagara Escarpment and Greenbelt.
While I loved their raw, pure and unpasteurized honey, I didn’t much care for the mead. The, understandably, sweet beverages were too sweet for my taste. Fortunately for me, they also produce a variety of more familiar VQA wines.
This week I have focused on their Locked & Loaded Red ($19.95), a blend of 43 percent Merlot, 27 percent Cabernet Sauvignon, 19 percent Cabernet Sauvignon, and 11 percent Malbec. This is a Bordeaux-style full-bodied red that has a bouquet of red currant and blackberry, licorice, herbs, and earthy forest floor. Due to the predominance of Merlot, the Locked & Loaded Red has a wonderful plush and velvety mouthfeel.
For this last stretch of cold weather, whip up a batch of rich beef stew to pair with this full-bodied Right Bank Bordeaux-style red.
